Mushroom Veggie Burger

4 tablespoons olive oil, divided

3 (8 ounce) packages sliced fresh mushrooms

½ medium onion, finely chopped

4 cloves garlic, minced

¾ cup dry bread crumbs

⅔ cup rolled oats

½ cup freshly shredded Parmigiano-Reggiano cheese

2 large eggs, beaten
Instructions
In a large skillet, heat 2 tablespoons of oil over medium heat. Add the mushrooms, onion, garlic, salt, pepper, and oregano. Cook, stirring occasionally, until the mushrooms release their juices and the liquid evaporates, about 10 minutes. Remove the skillet from the heat.
Transfer the cooked mushrooms to a cutting board and clean the skillet for the next step.
Chop the mushrooms into small pieces and place them into a large bowl. Add the bread crumbs and oats, then season with salt and pepper to taste. Stir in the grated Parmigiano-Reggiano cheese, followed by the eggs. Let the mixture sit for about 15 minutes, allowing the bread crumbs to soak up any extra moisture. Using damp hands, shape the mixture into patties, about 1/4 cup each.
Heat the remaining 2 tablespoons of oil in the skillet over medium heat. Cook the patties in the hot skillet until golden brown and fully cooked, about 2 1/2 to 3 minutes on each side.
