2 skinless, boneless chicken breasts

1 (15 ounce) can black beans, drained

1 ½ cups cooked long-grain white rice

¾ cup chopped lettuce

½ cup sour cream

½ cup shredded Monterey Jack cheese

⅓ (8 ounce) jar salsa
Instructions

Preheat your outdoor grill to medium heat and lightly grease the grate.

Season chicken breasts with garlic powder, salt, and pepper.

Grill the chicken for about 6 minutes on each side, or until it's fully cooked and no longer pink in the center. Use an instant-read thermometer to ensure the internal temperature reaches at least 165°F (74°C). Slice the chicken into strips or small pieces.

Heat the corn and black beans in separate saucepans over medium-low heat, covered, for around 5 minutes, or until warm.

On two plates, layer cooked rice, corn, black beans, and grilled chicken. Finish with a topping of lettuce, sour cream, Monterey Jack cheese, and salsa.
Chef’s Tips
Feel free to swap in Mexican garlic seasoning in place of the garlic powder for an extra kick.
Chipotle salsa is a great choice for adding flavor as a topping.
