Peanut Sauce Seitan (Vegetarian Gai Tua)

2 teaspoons chopped fresh ginger

3 cloves garlic, chopped

1 teaspoon red curry paste

1 (15 ounce) can coconut milk, divided

1 (16 ounce) package chicken-style seitan, cut into strips or cubes

3 tablespoons smooth peanut butter

3 tablespoons white sugar

1 tablespoon vegetable oil

1 teaspoon tamari or soy sauce

½ teaspoon chili garlic sauce

½ teaspoon vegetarian oyster sauce

½ sweet onion, chopped

1 bunch fresh spinach, chopped

4 green onions, chopped
Directions

In a small bowl, combine ginger, garlic, and curry paste. Gradually pour in 1/4 cup coconut milk, stirring until smooth. Add the seitan and mix until it's fully coated in the marinade. Let it marinate in the fridge for 30 minutes to 1 hour for maximum flavor absorption.

In a medium bowl, mix the remaining coconut milk, peanut butter, sugar, vegetable oil, tamari, chili garlic sauce, and oyster sauce. It’s okay if the mixture isn’t perfectly blended at this point—the ingredients will meld beautifully when cooked. Set the sauce aside.

Spray a large skillet with cooking spray and heat it over high heat. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the marinated seitan and cook until heated through, about 7 minutes. Add the sauce, stirring to combine. Add spinach and green onions, and cook for another 3 minutes until the sauce thickens and the spinach wilts.
