Pesto Chicken Penne Casserole
Ingredients List
-
½ cup seasoned bread crumbs
-
½ cup grated Parmesan cheese
-
1 tablespoon olive oil
-
1 (16 ounce) box penne pasta
-
6 cups cubed cooked chicken
-
4 cups shredded Italian cheese blend
-
3 cups fresh baby spinach
-
1 (15 ounce) can crushed tomatoes
-
1 (15 ounce) jar Alfredo sauce
-
1 (15 ounce) jar pesto sauce
-
1 ½ cups milk
Cooking Instructions
Preheat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish. In a small bowl, mix the bread crumbs, Parmesan cheese, and olive oil until the crumbs are evenly coated. Set the mixture aside.
Bring a large pot of lightly salted water to a boil over high heat. Once boiling, add the penne pasta and stir. Let the water return to a boil, then cook the pasta uncovered, stirring occasionally, for about 11 minutes, until the pasta is tender yet firm to the bite. Drain thoroughly in a colander.
In a separate bowl, mix the chicken with the Italian cheese blend, spinach, tomatoes, Alfredo sauce, pesto sauce, and milk. Once the pasta is ready, stir it into the mixture and transfer everything to the prepared baking dish. Sprinkle the top with the breadcrumb topping.
Bake in the preheated oven for 40 to 45 minutes, or until the top is golden brown and bubbling.
Chef's Tip
I prefer to make my own Alfredo sauce and use 2 cups of it instead of store-bought varieties.
