Pork and Quinoa Stir-Fry

1 cup cubed fully cooked ham

½ cup diced red bell pepper

½ cup chopped green onion, white and green parts separated and divided

3 cloves garlic, minced

1 tablespoon rice vinegar

1 tablespoon soy sauce, or to taste

1 teaspoon chile-garlic sauce (such as Sriracha), or more to taste (Optional)

1 teaspoon sesame seeds, or to taste (Optional)
Cooking Instructions
Rinse the quinoa under cold water for about a minute, then drain thoroughly.
Combine quinoa with 1 1/2 cups of cold water in a saucepan. Add a pinch of salt, bring to a boil, then reduce the heat to low. Cover and simmer until the quinoa is tender, about 15 minutes. Remove from heat and let it sit, covered, for 5 minutes, then fluff with a fork.
Heat vegetable oil in a large skillet over medium heat. Add ham, bell pepper, and the white parts of the green onion, cooking until the ham begins to brown, about 5 minutes. Stir in garlic, then remove from heat and cook for another 1 to 2 minutes until fragrant.
Add the fluffed quinoa to the skillet and return to the stove over medium-low heat. Stir occasionally and cook for 2 to 3 minutes until heated through. Remove from heat, then stir in vinegar, soy sauce, chile-garlic sauce, and sesame seeds. Garnish with the green parts of the green onion.
