Pork Chops with Cheesy Rice Casserole
Ingredients List
-
1 (16 ounce) can chicken broth
-
1 ½ cups uncooked rice
-
1 (10 ounce) can cream of chicken soup
-
1 cup water
-
4 ounces shredded Cheddar cheese
-
1 pound boneless pork chops
-
salt and ground black pepper to taste
Cooking Instructions
-
Preheat your oven to 350°F (175°C) and lightly grease a 3-quart casserole dish.
-
Whisk together chicken broth, rice, cream of chicken soup, and water in the prepared dish until smooth. Stir in Cheddar cheese, season with salt and pepper, and mix well.
-
Place pork chops on top of the rice mixture in a single layer, seasoning them with additional black pepper.
-
Bake in the preheated oven until the rice is tender and the pork chops are golden brown, about 80 minutes.
Cooking Tips
Consider adding a 4-ounce can of green chiles, some sliced mushrooms, or a handful of broccoli florets for extra flavor.
You can swap out the broth and soup for any variety you prefer, use American cheese instead of Cheddar, or even replace the pork with chicken fillets.
