Punjabi-style Eggplant Bhurtha
Ingredients Required

1 eggplant

2 tablespoons vegetable oil

½ teaspoon cumin seeds

1 medium onion, sliced

1 teaspoon chopped fresh ginger

1 large tomato — peeled, seeded, and diced

1 clove garlic, minced

½ teaspoon ground turmeric

½ teaspoon ground cumin

½ teaspoon ground coriander
-
¼ teaspoon cayenne pepper

½ teaspoon salt, or to taste

ground black pepper to taste

¼ cup chopped fresh cilantro
Instructions
Preheat your oven's broiler. Lightly oil the eggplant or coat it with cooking spray. Place it under the broiler and cook for about 30 minutes, turning occasionally, until the skin is blistered and the flesh becomes soft. Cut the eggplant in half lengthwise, scoop out the flesh, discard the skin, and chop the flesh into pieces. Set aside.
Heat oil in a large skillet or wok over medium-high heat. Add cumin seeds and let them sizzle and turn golden brown, but be careful not to burn them. Add onion, ginger, and garlic; cook and stir until softened. Stir in tomato, then season with turmeric, ground cumin, ground coriander, cayenne, salt, and black pepper. Cook and stir for a few minutes.
Add the eggplant pieces to the skillet and cook for 10-15 minutes to allow some of the moisture to evaporate. Taste and adjust the seasoning as needed. Garnish with fresh cilantro and serve.
Chef’s Tip
I prefer not to let the onions brown too much.
If you like, you can add peas to the dish. Simply stir in 1/2 cup of frozen peas when simmering the tomatoes.
