Quick and Delicious Egg and Avocado Breakfast Burrito

2 avocados - peeled, pitted, and mashed

4 (10 inch) flour tortillas, warmed

⅔ cup dry curd cottage cheese

¼ cup ketchup
Cooking Instructions

Whisk together eggs, milk, and cheese in a bowl. Season with salt. Pour the mixture into a hot skillet over medium heat. Stir and cook until scrambled.

Season the mashed avocado with salt. Warm the tortillas in a separate skillet over medium heat, cooking until just heated through. Spread the seasoned avocado mixture onto one side of each tortilla. Top with scrambled eggs and cottage cheese. Roll up the tortillas into burritos and serve with a side of ketchup.
