Instructions

Preheat your oven to 450°F (220°C) and lightly grease a 9x13-inch baking dish.

Spread the potatoes and onions evenly in the prepared dish. Season with garlic powder, kosher salt, and chili powder. Drizzle with olive oil and toss until everything is well coated.

Roast in the oven, stirring every 10 minutes, until the potatoes are tender and golden with crispy edges, about 35 to 40 minutes. Remove from the oven and sprinkle with Cheddar cheese. Let it sit for about 5 minutes to allow the cheese to melt.
