Rosemary-Roasted Chicken with Apples and Potatoes

1 large onion, sliced

1 teaspoon salt, plus more to taste

5 medium apples - peeled, cored, and cut into 1/4-inch slices

1 pound Yukon Gold potatoes, cut into 1/4-inch slices

2 tablespoons olive oil

6 bone-in, skin-on chicken thighs

2 tablespoons chopped fresh rosemary

ground black pepper to taste
Cooking Instructions

Preheat your oven to 400°F (200°C). Lightly coat both the top and bottom sections of a broiler pan with cooking spray.

Melt butter in a skillet over medium heat. Add the sliced onion and season with a pinch of salt. Sauté for about 2 minutes. Stir in the sugar and continue to cook until the onion becomes translucent, 6 to 8 minutes, without browning. Remove from heat.

Layer the sliced apples, potatoes, and sautéed onions in the bottom section of the broiler pan. Cover with the top part of the broiler pan.

Drizzle olive oil over the chicken thighs. Season with rosemary, salt, and pepper. Rub the seasoning evenly over each thigh, then place them on the top part of the broiler pan.

Roast in the preheated oven until the chicken juices run clear and an instant-read thermometer inserted into the thickest part of the thigh, near the bone, reads 165°F (74°C), about 1 hour. Serve the roasted apples, potatoes, and onions alongside the chicken thighs.
