Saffron Rice from India
Ingredients List
-
⅛ teaspoon powdered saffron
-
2 cups boiling water, divided
-
2 tablespoons unsalted butter
-
1 cup uncooked long-grain white rice, not rinsed
-
1 teaspoon salt
Cooking Instructions
Place the saffron threads in a small bowl and pour in 1/2 cup of boiling water. Let it steep to release the flavor and color.
In a covered skillet, melt butter over medium-high heat. Add the rice and salt, stirring constantly, until the rice absorbs the butter and turns opaque—just be careful not to let it brown.
Quickly add the remaining 1 1/2 cups of boiling water along with the saffron-infused water. Cover the skillet right away, lower the heat, and cook until the liquid is fully absorbed, about 20 minutes. For the best results, avoid lifting the lid while the rice is cooking.
