Sarah's Spinach and Feta Orzo Rice Pilaf

½ cup orzo pasta

½ cup diced onion

2 cloves garlic, minced

2 cups chicken broth

½ cup white rice

1 cup chopped spinach

½ cup chopped Bulgarian feta cheese
Instructions

Heat butter in a skillet over medium-low heat. Add orzo and cook, stirring occasionally, until golden brown, about 3 to 5 minutes. Add the onion and cook, stirring from time to time, until softened, about 5 to 10 minutes. Stir in garlic and cook for another minute until fragrant.

Pour in the broth and rice, stirring to combine. Bring to a boil, then reduce the heat to medium-low, cover, and simmer for 20 to 25 minutes, or until the rice is cooked and the liquid has been absorbed.

Remove the skillet from heat. Stir in the spinach and feta cheese, then cover and let it sit for about 5 minutes, allowing the spinach to wilt and the feta to melt. Fluff the rice with a fork and serve.
Helpful Hints
Bulgarian feta can be found in most international supermarkets. It has a creamier texture compared to the Greek variety, which is often drier.
