Instructions
Begin by gathering all the ingredients. Preheat the oven to 350°F (175°C). Line an 8x4-inch loaf pan with two layers of aluminum foil, ensuring the long sides have about 3 inches of overhang. Lightly spray with cooking spray and set the pan on a baking sheet for easy handling.

In a large mixing bowl, combine the beef, stuffing mix, water, egg, salt, poultry seasoning, and 1/2 cup of ketchup. Use your hands to blend everything together until well combined, being careful not to overmix.

Gently press the mixture into the prepared loaf pan placed on the baking sheet.

While the meatloaf bakes, combine the brown sugar and the remaining 1/2 cup of ketchup in a small bowl and whisk until smooth. Once the meatloaf is out of the oven, evenly spread the ketchup mixture over the top.

Place the meatloaf back in the oven and bake at 350°F (175°C) until an instant-read thermometer inserted into the center reads 160°F (71°C), about 10 to 15 minutes. Once done, remove from the oven and let it rest for 5 minutes before slicing.

Lift the meatloaf out of the loaf pan using the aluminum foil overhang as handles, and transfer it to a cutting board. Slice into 8 even portions.
