Seared Wild Salmon Fillets

2 (3 ounce) fillets salmon, with skin

sea salt to taste

2 tablespoons olive oil
Instructions

Rinse the salmon fillets and dry them well with paper towels. Season generously with sea salt.

Heat olive oil in a large skillet over medium-high heat.

Place the salmon fillets in the skillet, skin-side up, and cook until the flesh turns golden brown, about 5 to 7 minutes. Flip the fillets and cook the skin until it becomes slightly crisp, approximately 5 more minutes. Remove the salmon from the skillet using a slotted spatula, leaving the oil in the pan.

Carefully remove the skin from the salmon. Fry the skin in the remaining oil for 2 to 3 minutes, or until crispy. Serve the crispy skin alongside the salmon fillets.
