Shrimp in Lobster-Style Sauce

Ingredients List
-
1 ½ teaspoons cornstarch
-
2 teaspoons cooking sherry
-
1 pound medium shrimp - peeled and deveined
-
¼ cup vegetable oil
-
2 cloves garlic, minced
-
¼ pound ground pork
-
1 cup water
-
2 tablespoons soy sauce
-
¼ teaspoon sugar
-
½ teaspoon salt
-
¼ cup cold water
-
1 ½ tablespoons cornstarch
-
1 large egg, beaten
Cooking Instructions
-
In a medium bowl, mix 1 1/2 teaspoons of cornstarch with sherry. Add shrimp and toss to coat evenly.
-
Heat oil in a wok over medium-high heat. Add shrimp and stir-fry for 3 to 5 minutes, until pink. Use a slotted spoon to transfer shrimp to a plate, leaving the oil in the wok.
-
Add garlic to the wok and stir-fry briefly, then add ground pork. Continue stir-frying for 3 to 5 minutes, until the pork is cooked through.
-
In a small bowl, combine 1 cup of water, soy sauce, sugar, and salt. Pour into the wok and stir well. Bring the mixture to a boil, then reduce heat to medium and simmer for about 2 minutes.
-
Whisk together 1/4 cup of cold water and 1 1/2 tablespoons of cornstarch in a small bowl, then add to the wok. Add shrimp back into the wok and bring to a simmer. Slowly pour in the beaten egg, stirring rapidly as it cooks. Serve immediately.
