Shrimp Penne Pasta

Ingredients

1 (16 ounce) package penne pasta

2 tablespoons olive oil

¼ cup chopped red onion

1 tablespoon chopped garlic

¼ cup white wine

2 (14.5 ounce) cans diced tomatoes

1 pound shrimp, peeled and deveined

1 cup grated Parmesan cheese
Instructions

Boil a large pot of salted water and cook the pasta for 8 to 10 minutes until al dente; drain.

In a skillet, heat oil over medium heat. Add onion and garlic, cooking until the onion softens. Stir in wine and tomatoes, then cook for an additional 10 minutes, stirring occasionally.

Add shrimp to the skillet and cook for about 5 minutes, or until shrimp is opaque. Toss with pasta and sprinkle with Parmesan cheese before serving.
