Sicilian-Style Meat Roll

2 eggs, beaten

½ cup tomato juice

¾ cup soft bread crumbs

2 tablespoons snipped fresh parsley

½ teaspoon dried oregano, crushed

¼ teaspoon sea salt

¼ teaspoon ground black pepper

1 clove garlic, minced

2 pounds lean ground beef

1 (6 ounce) package thinly sliced ham

1 (6 ounce) package sliced mozzarella cheese
Instructions

In a large mixing bowl, combine eggs and tomato juice. Stir in breadcrumbs, parsley, oregano, salt, pepper, garlic, and ground beef. Mix thoroughly. Preheat the oven to 350°F (175°C).

On a sheet of foil or wax paper, press and shape the meat mixture into a 10x8 inch rectangle. Layer ham slices on top of the meat, leaving a small border around the edges. Tear the cheese slices and scatter them over the ham, reserving one slice whole.

Starting from one short edge, carefully roll up the meat using the foil or wax paper to assist. Seal the ends and edges of the roll. Place the roll seam-side down in a 9x13 inch baking dish.

Bake in the preheated oven for about 75 minutes. Cut the reserved slice of cheese into 4 triangles and arrange them on top of the meat roll. Bake for an additional 2 minutes or until the cheese is melted and bubbly.
