Simple and Flavorful Mexican Pork Chops

1 green bell pepper, sliced

1 cup shredded Cheddar cheese
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with cooking spray.
Season the pork chops with salt and pepper. Heat some vegetable oil in a large skillet over medium heat. Add the pork chops and cook until browned on both sides, about 5 minutes per side. Remove from skillet and set aside.
In the prepared baking dish, combine water, rice, tomato sauce, picante sauce, and taco seasoning. Place the browned pork chops in the rice mixture, and top with sliced bell peppers. Cover the dish.
Bake in the preheated oven until the pork chops are no longer pink in the center and the rice is tender, about 1 hour. Check doneness with an instant-read thermometer; the chops should reach 145°F (63°C). Uncover and sprinkle with shredded Cheddar cheese.
Continue baking, uncovered, until the cheese is melted and bubbly, about 5 to 10 more minutes.
