1 avocado - peeled, pitted, and diced

12 oil-packed sun-dried tomatoes, drained and sliced

Instructions

Heat 1 tablespoon of olive oil in a large pan over medium heat. Season the chicken with Cajun spices on both sides, then place it in the hot oil. Add crushed garlic to the pan. Cook the chicken for about 5 minutes on each side, or until it's fully cooked through. Remove from heat, drain on paper towels, let cool for a moment, then dice the chicken; discard the oil and garlic.
