Slow-Braised Green Beans

6 slices bacon, sliced crosswise into 1/2-inch pieces

1 onion, sliced lengthwise

3 cloves garlic, minced

¼ cup tomato sauce

2 pounds fresh green beans, trimmed

3 cups chicken broth

salt and ground black pepper to taste

1 pinch cayenne pepper, or to taste
Instructions
Heat a saucepan over medium flame and cook the bacon, stirring occasionally, until it’s nearly crispy, about 6 minutes. Add the onions and cook until the browned bits in the pan dissolve into the onions' juices, leaving them soft and golden brown, about 5 minutes. Stir in the garlic and tomato sauce, cooking for an additional minute until the garlic becomes fragrant and tender.
Add the green beans to a skillet and pour in the chicken broth. Increase the heat to high, then season with salt, black pepper, and cayenne pepper. Bring the mixture to a simmer, allowing the beans to soften. Reduce the heat to medium-low and continue simmering for 1 1/2 hours, stirring occasionally. Add more broth or water if the liquid level decreases too much.
Adjust the seasoning with salt, black pepper, and cayenne pepper according to your taste. Continue cooking for about 30 more minutes, or until the beans are fully tender. Transfer the beans and some of the flavorful broth to a large serving platter.
Cooking Tips
When slicing the onion, cut along the grain of the fibers to help the pieces maintain their shape and prevent them from breaking apart.
Feel free to use any type of tomato product, such as fresh chopped tomatoes, in place of tomato sauce.
