10 pounds frozen chitterlings, thawed and cleaned

1 onion, roughly chopped

2 teaspoons salt

1 teaspoon minced garlic

1 teaspoon crushed red pepper flakes
Cooking Instructions

Gather all necessary ingredients.

Rinse and clean the chitterlings, then place them in a 6-quart pot. Cover with cold water.

Bring the water to a vigorous boil, then add onions, seasoning with salt, garlic, and red pepper flakes.

Let simmer for 3 to 4 hours, until the chitterlings turn from translucent to white and are tender to the bite.
Cleaning and Preparing Raw Chitterlings:
Submerge chitterlings in cold water during the cleaning process. Rinse each piece thoroughly under cold running water, removing any impurities or debris. Leave some fat on the chitterlings as it’s part of the traditional preparation. After cleaning, soak them in two separate cold water baths for several minutes. The second bath should be noticeably clearer; if not, repeat the process with a fresh bath of cold water.
To prevent contamination, disinfect any surfaces with a bleach-based cleaner and wash your hands thoroughly with soap after handling raw chitterlings.
