Spanish Green Beans with Tomatoes

2 pounds fresh green beans, cut into 1-inch lengths

3 cups canned diced tomatoes with their juice

1 tablespoon chopped fresh chives

3 tablespoons pine nuts

2 tablespoons lemon juice

1 bay leaf

salt and pepper, to taste
Instructions

Heat oil in a large pan over medium heat. Add garlic and cook for about 2 minutes until fragrant, adjusting heat to prevent burning. Add the green beans and continue cooking for 4 minutes, stirring occasionally, until the beans are bright green but still firm.

Stir in tomatoes, lemon juice, pine nuts, and season with chives, bay leaf, salt, and pepper. Bring to a boil while stirring frequently. Lower the heat and let simmer uncovered for 25 to 30 minutes. Discard the bay leaf before serving.
