Spicy Savory Meatloaf

⅔ cup ketchup, divided

1 ½ pounds ground beef

¾ pound spicy ground pork sausage

1 cup bread crumbs

⅓ cup minced fresh parsley

2 large eggs, slightly beaten
Cooking Instructions

Preheat your oven to 350°F (175°C).

In a large skillet, melt butter over medium heat. Add onion, green onions, carrots, celery, and garlic, cooking and stirring for about 5 minutes until fragrant. Cover and cook occasionally, stirring, until the carrots are soft, about 5 minutes more. Stir in 1/3 cup of ketchup, Worcestershire sauce, salt, and pepper; cook for another minute until everything is heated through.

In a large bowl, combine ground beef, sausage, vegetable mixture, breadcrumbs, parsley, and eggs. Shape the mixture into a loaf and place in a rectangular baking pan with 2-inch sides. Top with the remaining 1/3 cup of ketchup.

Bake in the preheated oven for about 1 hour, or until the meat is no longer pink in the center. Use an instant-read thermometer to ensure the internal temperature reaches at least 160°F (70°C).
