Spinach and Lentils

Ingredients List

1 tablespoon vegetable oil

2 white onions, halved and sliced into 1/2 rings

3 cloves garlic, minced

½ cup lentils

2 cups water

1 (10 ounce) package frozen spinach

1 teaspoon salt

1 teaspoon ground cumin

freshly ground black pepper to taste

2 cloves garlic, crushed
Cooking Instructions

Heat oil in a large pan over medium heat. Sauté the onions for about 10 minutes, until golden. Add minced garlic and cook for another minute.

Add lentils and water to the pan, bring to a boil. Cover, reduce heat, and simmer for around 35 minutes, or until the lentils are tender (this may vary based on your water and lentils).

While the lentils cook, microwave the spinach according to package instructions. Add the spinach, salt, and cumin to the pan. Cover and simmer for another 10 minutes, until everything is heated through. Season with black pepper and more garlic to taste.
