Sriracha Grilled Tofu Skewers

Ingredients List

1 (8 ounce) container extra firm tofu, drained and sliced into large chunks

1 zucchini, cut into large chunks

1 red bell pepper, cut into large chunks

10 large mushrooms

2 tablespoons sriracha chili garlic sauce

¼ cup soy sauce

2 tablespoons sesame oil

¼ cup diced onion
-
1 jalapeno pepper, diced

ground black pepper to taste
Instructions
Combine tofu, zucchini, red bell peppers, and mushrooms in a bowl. In a separate small bowl, mix sriracha sauce, soy sauce, sesame oil, onions, jalapenos, and pepper. Pour this sauce over the tofu and veggies, tossing gently to coat. Cover and refrigerate for at least one hour to marinate.
Preheat your outdoor grill to a medium-high temperature and lightly grease the grill grates.
Skewer the tofu and vegetables, then grill each skewer for about 10 minutes, or until they reach your preferred level of doneness. Reserve any leftover marinade to use as a dipping sauce.
