1 (1 1/2 pound) eggplant, halved lengthwise

1 tablespoon olive oil

8 ounces bulk Italian sausage

¼ teaspoon garlic powder

¼ teaspoon dried Italian seasoning

2 cups spaghetti sauce, divided

1 cup shredded mozzarella cheese, divided

Instructions

Preheat your oven to 400°F (200°C).

Coat the cut sides of the eggplant with olive oil and arrange them, cut-sides up, on a baking sheet.

Roast the eggplant in the preheated oven for 30 minutes, then allow it to cool for a few minutes. Keep the oven on.

While the eggplant roasts, brown the Italian sausage in a skillet over medium-high heat, draining off excess fat. Place the sausage in a bowl, then season with garlic powder, Italian seasoning, and black pepper. Add 1/2 cup of spaghetti sauce, 1/2 cup of shredded mozzarella, breadcrumbs, and the egg. Mix thoroughly.

Once the eggplant has cooled, scoop out the flesh, leaving about 1/2 inch from the skin to form a shell. Chop the eggplant flesh and stir it into the sausage mixture. Stuff the mixture evenly into the eggplant shells, then top with the remaining mozzarella cheese.

Bake the stuffed eggplant in the preheated oven for about 30 minutes, or until the filling is set and the cheese is bubbly and golden. While baking, heat the remaining 1 1/2 cups of spaghetti sauce in a saucepan over medium-low heat to serve alongside the eggplant.
