Chicken Primavera Alfredo: A Creamy, Veggie-Packed Pasta Dish

1 pound fettuccine pasta

¼ cup butter

2 skinless, boneless chicken breast halves, cut into strips

1 clove garlic, minced, or more to taste

4 ounces sliced fresh mushrooms

1 green bell pepper, sliced

1 red bell pepper, sliced

½ cup butter

1 pint heavy whipping cream

½ cup grated Parmesan cheese

1 (8 ounce) package cream cheese, cut into pieces

salt and ground black pepper to taste

1 egg, beaten
Instructions for Cooking

Bring a large pot of lightly salted water to a boil. Add the fettuccine, return to a boil, and cook for about 8 minutes, until pasta is al dente. Drain the pasta and set aside.

In a large skillet, melt 1/4 cup of butter over medium heat. Add the chicken and garlic, cooking until the chicken is browned. Stir in the mushrooms and bell peppers, cooking until the vegetables are tender.

In a separate saucepan, melt the remaining 1/2 cup of butter with half of the heavy cream over medium heat. Slowly add the Parmesan cheese, followed by chunks of cream cheese, stirring continuously. Add the rest of the heavy cream and simmer until the sauce thickens, about 5 minutes. Mix the cooked chicken and vegetable blend into the creamy sauce.

Add the cooked fettuccine to the sauce and stir in the egg. Cook for another minute, then serve immediately.
