Stuffed Manicotti

5 ½ ounces manicotti pasta

1 pint part-skim ricotta cheese

8 ounces shredded mozzarella cheese

¾ cup grated Parmesan cheese, divided

2 large eggs

1 teaspoon dried parsley

salt and ground black pepper to taste

1 (16 ounce) jar spaghetti sauce
Instructions
Boil the manicotti pasta in water until it's al dente, about 10 to 12 minutes. Drain the pasta and rinse it under cold water to stop the cooking process.
Preheat your oven to 350°F (175°C).
In a large bowl, combine ricotta, mozzarella, 1/2 cup of Parmesan cheese, eggs, parsley, salt, and pepper. Mix until smooth and well blended.
Spread 1/2 cup of spaghetti sauce in the bottom of a 11x17-inch baking dish. Fill each manicotti shell with about 3 tablespoons of the cheese mixture, then place them over the sauce. Pour the remaining sauce over the shells and top with the rest of the Parmesan cheese.
Bake in the preheated oven for about 45 minutes, or until bubbly and golden.
