Stuffed Peppers with Millet

1 cup millet

4 cups water

4 cubes vegetable bouillon

5 medium bell peppers

3 medium tomatoes, chopped

1 (15 ounce) can black beans, drained
Instructions

In a saucepan, bring the millet, water, and vegetable bouillon to a boil. Once boiling, reduce the heat to low, cover, and let simmer for 15 minutes, or until the liquid is absorbed.

Cut off the tops of the peppers, removing the seeds and core. Set them aside. Once the millet is cooked, mix in the tomatoes and black beans. Stuff the peppers with the mixture, then place them in a glass baking dish and cover with plastic wrap.

Microwave the peppers for 10 minutes, or until tender. Rotate the peppers every 2 to 3 minutes to ensure even cooking.
