Stuffed Vegetarian Green Peppers

1 cup uncooked white rice

1 (15 ounce) can black beans, drained and rinsed

1 tablespoon chili powder

4 green bell peppers

16 slices Swiss cheese

1 (15 ounce) can tomato sauce
Cooking Instructions

Preheat the oven to 400°F (200°C).

Bring 2 cups of water to a boil in a saucepan. Add the rice, stir, reduce the heat, cover, and let it simmer for 20 minutes.

Mix the cooked rice with black beans and chili powder. Cut the tops off the peppers, remove the ribs and seeds. Fill the peppers with 2 tablespoons of the rice and bean mixture, adding a slice of cheese on top. Repeat until all peppers are filled, finishing with a layer of cheese on top.

Place the stuffed peppers in the preheated oven and bake for about 45 minutes, until the peppers are tender.

While the peppers bake, heat the tomato sauce in a small saucepan over low to medium heat. Once the peppers are ready, slice them in half, top with tomato sauce, and serve.
