Swanson's Tender Smothered Pork Chops

1 ¾ cups Swanson® Beef Broth or Swanson® Beef Stock

2 tablespoons cornstarch

2 tablespoons olive oil, divided

6 (5 ounce) boneless pork chops, 3/4-inch thick

salt and ground black pepper to taste

1 large onion, sliced

2 cloves garlic, minced
Cooking Instructions

In a small bowl, mix together broth and cornstarch until smooth, then set aside.

Heat 1 tablespoon of oil in a 12-inch skillet over medium-high heat. Season the pork chops with salt and pepper. Sear the pork chops in the hot oil, cooking until golden brown on both sides, about 5 minutes. Remove the pork chops and set them aside on a plate.

Add the remaining 1 tablespoon of oil to the skillet over medium heat. Sauté the onions until tender-crisp, about 3 minutes. Add garlic and cook for another minute until fragrant. Pour in the broth mixture and bring to a boil, stirring until the sauce thickens.

Return the pork chops to the skillet, reduce the heat to low, cover, and simmer until the pork is fully cooked, about 5 minutes. Use an instant-read thermometer to ensure the pork has reached at least 145°F (63°C).
Helpful Hints
For a flavorful Dijon-rosemary twist on your pork chops: add 1 tablespoon of Dijon mustard to the broth mixture in Step 1. Once the broth has thickened in Step 3, stir in 2 teaspoons of freshly chopped rosemary leaves for a fragrant finish.
