Ingredients List
-
¼ cup olive oil
-
1 yellow onion, diced
-
2 carrots, grated
-
1 ¼ cups raisins
-
1 tablespoon pumpkin pie spice
-
1 ½ cups quinoa
-
¾ cup chopped cilantro
-
1 ½ cups orange juice
-
1 ½ cups water
-
¼ cup chopped walnuts (Optional)
Cooking Instructions
-
Heat olive oil in a large pan over medium heat. Add onions, carrots, raisins, and pumpkin pie spice, stirring frequently until the onions turn golden, about 5 minutes. Mix in quinoa and cilantro, letting them toast for a few minutes. Add orange juice and water, stirring to combine, and bring to a boil. Lower the heat and cook until the liquid is absorbed, around 15 minutes. Remove from heat and let it sit for 5 minutes, then mix in walnuts. Fluff with a fork and serve.
