Tender Swiss Steak

Ingredients List

¼ cup all-purpose flour

½ teaspoon salt

¼ teaspoon ground black pepper

1 (2 pound) beef round steak, 1 inch thick

2 tablespoons vegetable shortening

¼ cup water, or as needed

1 (8 ounce) can diced tomatoes

1 onion, minced

½ green bell pepper, chopped

salt and ground black pepper to taste
Instructions

In a bowl, combine flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Sprinkle half of this mixture onto one side of the round steak, then pound to ensure it sticks. Flip the steak and repeat with the remaining flour mixture, pounding again to coat evenly. Cut the steak into 6 portions.

Heat shortening in a large skillet over medium heat. Add the steak pieces and cook until browned, about 7 to 10 minutes per side. Cover and simmer, adding water as needed, until the steak becomes tender, approximately 1 hour.

Flip the steak pieces and add tomatoes, onion, and green bell pepper to the skillet. Season with salt and pepper to taste. Simmer for an additional 30 minutes, or until the vegetables are tender.
