Turkey Tetrazzini Casserole

Ingredients Needed

2 (8 ounce) packages angel hair pasta

¼ cup butter

⅔ cup sliced onion

¼ cup all-purpose flour

2 cups milk

1 teaspoon salt

¼ teaspoon ground white pepper

½ teaspoon poultry seasoning

¼ teaspoon ground mustard

1 cup shredded sharp Cheddar cheese, divided

2 tablespoons chopped pimento peppers (Optional)

1 (4.5 ounce) can sliced mushrooms

1 pound cooked turkey, sliced
Instructions

Preheat your oven to 400°F (200°C). Bring a large pot of salted water to a boil and cook the pasta for 4 minutes, until just underdone. Drain the pasta.

In a saucepan over medium heat, melt the butter. Add the onion and sauté until softened. Stir in the flour and cook until combined, then slowly add the milk, stirring constantly to prevent lumps. Season with salt, pepper, poultry seasoning, and mustard. Stir until the mixture thickens. Remove from heat and add 2/3 cup cheese and pimentos, stirring until the cheese melts. Stir in the mushrooms (with their liquid) into the cheese sauce.

Layer the pasta in the bottom of a 9x13-inch baking dish. Add a layer of turkey, followed by a layer of cheese sauce. Repeat the layers. Top with the remaining 1/3 cup of cheese.

Bake in the preheated oven for about 25 minutes, until the sauce is bubbling and the cheese on top is golden brown.
