Ultimate Roast Chicken with Crispy Skin

Preheat your oven to 450°F (230°C).

Remove the giblet packet from the chicken’s cavity and thoroughly pat the chicken dry with paper towels. Stuff the cavity with 1 tablespoon of butter, salt, black pepper, and pieces of onion, celery, and lemon. Gently loosen the skin over the breast and thighs with your fingers, then insert garlic slices beneath the skin. Place the chicken breast-side up on a rack in a roasting pan.

Melt 2 tablespoons of butter in a small saucepan over medium-low heat, then stir in dried parsley and Italian seasoning. Pour half of the butter mixture over the chicken, making sure to coat it evenly. Set the remaining butter aside for later.

Roast the chicken for 20 minutes, then flip it so the breast is facing down. Pour the remaining butter mixture over the chicken and brush it onto all parts of the bird. Return the chicken to the oven and roast for another 10 minutes.

Reduce the oven temperature to 325°F (165°C). Continue roasting until the skin is crispy and golden, and the juices run clear—about 1 hour and 20 minutes. An instant-read thermometer inserted into the thickest part of the thigh (without touching bone) should register 160°F (70°C). Allow the chicken to rest uncovered for 10 minutes before carving and serving.

Don’t cover the chicken while it rests, as this will soften the crispy skin.
Use the giblets to make a flavorful gravy by simmering them with the pan drippings.
