Vegetarian Cheese Lasagna

Ingredients Needed

1 (16 ounce) package lasagna noodles

4 cups ricotta cheese

4 eggs
-
¼ cup grated Parmesan cheese

salt and pepper to taste

1 teaspoon olive oil

3 cloves garlic, minced

1 (32 ounce) jar spaghetti sauce

1 teaspoon Italian seasoning

2 cups shredded mozzarella cheese
Instructions

Prepare all the ingredients. Preheat your oven to 350°F (175°C).

Bring a large pot of salted water to a boil. Cook the lasagna noodles for 8-10 minutes, or until al dente. Drain and lay the noodles flat on foil to cool.

In a bowl, combine ricotta, eggs, Parmesan cheese, salt, and pepper. Stir until fully mixed.

Heat oil in a medium saucepan over medium heat. Add garlic and sauté for 2 minutes. Stir in spaghetti sauce and Italian seasoning, heating for 2-5 minutes until warmed through, stirring occasionally.

Spread 1/2 cup of sauce on the bottom of a 9x13-inch baking dish. Layer with noodles. Spread half of the ricotta mixture on top, then add another layer of noodles. Pour 1 1/2 cups of sauce over the noodles and spread the remaining ricotta mixture on top.

Add the final layer of noodles, then top with the remaining sauce and sprinkle with mozzarella. Cover with greased foil.

Bake in the preheated oven for about 45 minutes, until the cheese is melted and bubbly.
