Cooking Instructions

Bring a large pot of salted water to a boil. Cook the gnocchi for 2 to 4 minutes, or until they rise to the surface. Drain and set aside.

While the gnocchi cooks, melt butter in a large skillet over medium heat. Add the mushrooms and sauté for 2 minutes. Then, mix in spinach, basil, garlic, Parmesan, parsley, salt, and pepper. Stir until the spinach wilts and the sauce thickens, about 5 minutes. Add the gnocchi and stir to coat evenly with the sauce; cook for an additional 2 minutes.
Cooking Tip
Substitute Parmesan with any hard or semi-aged Italian cheese, like Pecorino or Asiago, for a different flavor profile.
