1 cup long grain rice

2 tablespoons olive oil

1 onion, chopped

2 (15 ounce) cans black-eyed peas, rinsed and drained

½ teaspoon Cajun seasoning
Instructions

Bring broth and rice to a boil in a saucepan. Lower the heat to medium-low, cover, and cook until the rice is tender and the liquid has been absorbed, about 20 to 25 minutes.

In a pot, heat olive oil over medium-high heat. Sauté the onion in the oil until it becomes translucent, about 5 to 7 minutes. Add the cooked rice, black-eyed peas, and Cajun seasoning to the pot with the onion.

Cover the pot and cook for an additional 10 minutes, allowing the flavors to meld together.
