Instructions
Prepare all the ingredients beforehand.

Combine canola oil, lemongrass, lemon juice, soy sauce, brown sugar, garlic, and fish sauce in a glass bowl, stirring until the sugar dissolves.

Place the chicken in the marinade, turning to ensure it's evenly coated. Refrigerate and marinate for 20 minutes to 1 hour.

Preheat the grill to medium heat and lightly oil the grate. Remove the chicken thighs from the marinade, gently shaking off excess liquid. Discard the remaining marinade.

Grill the chicken on the preheated barbecue, cooking for 3 to 5 minutes per side, or until the meat is no longer pink in the center and the juices run clear. The internal temperature should reach at least 165°F (74°C) when checked with an instant-read thermometer.
