Each room is separate, so you can spend a quiet time. The view from the room and bath is great, but the food is the best.Whichever you choose, it's delicious and you can enjoy the season. The staff have a good sense of distance and are very attentive. This is an inn I would like to visit again!

The food is just delicious.Fried rock oysters from Noto. Grilled Nodoguro sushi. Octopus rice.Every dish is a technique that brings out the ingredients and flavor.Apparently crab dishes are recommended in winter.

Mind-bendingly awesome food. It's not cheap at ¥20,000 per person, but is truly incredible. 9 course menu, all of which were delightful and remarkable in their own way, but two or three courses in particular were some of the very best I've ever tased. The seared sea bass Nigri will show you what sushi is meant to be, and the wagyu beef... I will not even try to explain as I could not possibly do it justice. The chef is a master. The location is perfect. 10/10

---------------------✍◆Address1-31-25 Higashiyama, Kanazawa City, Ishikawa Prefecture◆AccessAbout 15 minutes by taxi from Kanazawa Station, located at the back of Higashi Chaya.◆Business hours11:30 - 13:0017:00 - 19:00◆Regular holidaysIrregular holidays◆Parking lotThere are several parking spaces at the inn, so we contacted the hotel in advance to inquire about availability.----------------------Founded in 1890Rosanjin, who is obsessed with Kaga's delicious food and hospitality and has frequently visited Yamanoo, says of the cuisine, ``Let's bring out the unique flavors.'' It is also said that ``Utensils are the kimono of cooking.''Delicious food is simple and bold. The essence of Rosanjin's cuisine has been passed down here at Yamanoo, where we carefully prepare dishes rich in seasonal flavors using the rich ingredients of Hokuriku.A quiet area overlooking Higashi Chaya District below. Please enjoy the taste unique to Kaga's traditional Japanese-style inns, where you can enjoy the food while admiring the garden. (From official website)ORDER-----------◆“Nodoguro Gozen” Limited lunch course with rice cooked in an earthenware pot (8,000 yen)10 appetizers, pot-cooked dogfish rice, soup, pickled vegetables, sweets-------------------[What I ate]◇10 appetizers (clockwise from bottom right)Comes with non-alcoholic plum wine as a toast. It was fragrant, not too sweet, well chilled and delicious.・Kintokiso Soy Sauce x Ginger・Simmered sea bream roe, shrimp sweet potato, and snap peas・Simmered carrots, bamboo shoots, and pumpkin・Seared Doguro SushiVery delicious with the roasted aroma and soy sauce.・Smelt, squid (?), and shishito pepper tempuraFeel the spring with the bittersweet taste of smelt liver・Dashi-maki egg and gratedIt was a simple yet delicious soup stock made at a restaurant that you can't even imitate at home.・Bonito with soy sauce and kojiIt has a sticky flavor・Duck stewIt's so cute and sweetThe duck was cooked with really good seasoning, it was soft and the duck itself had a strong flavor, and the fat was delicious without any unpleasant taste.・Sea bream and salted kelp (I forgot the type of fish)・Simmered shrimp and conger eelSaimaki shrimp had a good texture but was moist, and the shrimp had a strong flavor and was very delicious.◇Kettle-cooked Nodoguro GohanThe rice is hard and has green vegetables mixed in.The first bowl will be served by the hostess, and you will enjoy the large piece of black-throated fish along with the rice. For the second bowl, the proprietress loosened up the Nodoguro fish, mixed it with rice, poured some bonito soup over it, and served it with Ochazuke.Of course it's delicious as is, but I prefer ochazuke, where the fat from the Nodoguro melts with the heat of the rice, giving it a nice aroma, and adding dashi stock gives it a rich flavor.Toppings include bubu arare, salted kelp, wasabi, green onions, and dried seaweed.I liked adding lots of wasabi, dried seaweed, and green onions.◇Red seaweed soup, picklesThe miso-pickled daikon radish inside the pickles was delicious.◇Uguisu KuzumochiIt had a very elegant appearance with a modest sweetness.【thoughts】When I visit Kanazawa, I want to eat at a historical restaurant at least once.Pass through Higashi Chaya District and go up a steep slope to the entrance, and after passing through there you will see a large Japanese house. It's spacious, and you can overlook the beautiful courtyard and the town of Kanazawa from the dining area, so you can forget about time and spend a relaxing time. The space was a perfect embodiment of Rosanjin's words, ``Making the best use of the natural flavors of the ingredients'' and ``Utensils are the kimono of cooking.''Next time I would like to stay at a ryokan.
