Adobo Grilled Sirloin

Ingredients List

1 medium lime, juiced

1 tablespoon minced garlic

1 teaspoon dried oregano

1 teaspoon ground cumin

2 tablespoons finely chopped canned chipotle peppers in adobo sauce

2 tablespoons adobo sauce, or to taste

4 (8 ounce) beef sirloin steaks

salt and pepper to taste
Instructions

In a small bowl, whisk together lime juice, minced garlic, oregano, and cumin. Mix in the adobo peppers and sauce until combined.

Use a sharp knife to pierce both sides of the steaks. Season with salt and pepper. Transfer steaks to a glass dish and pour the adobo marinade over them, making sure they’re well coated. Cover and refrigerate for 1 to 2 hours to marinate.

Preheat your outdoor grill to high heat and lightly oil the grill grates.

Take the steaks out of the marinade, discarding the leftover liquid. Shake off any excess marinade.

Grill the steaks on the hot grill for 6 minutes per side, or until they reach your desired level of doneness. For medium, the internal temperature should read 140°F (60°C) on an instant-read thermometer.
