Avocado Pesto Sauce

Ingredients List

1 (8 ounce) package penne pasta

¼ pound uncooked medium shrimp, peeled and deveined (Optional)

1 medium avocado, peeled and pitted

½ cup fresh basil leaves, or to taste

4 tablespoons grated Romano cheese, divided

2 cloves garlic

½ medium lemon, juiced

salt and ground black pepper to taste

¼ cup olive oil, or as needed

¼ cup diced cherry tomatoes, or more to taste (Optional)
Instructions

Bring a large pot of salted water to a boil. Add the penne and cook, stirring occasionally, for about 8 to 10 minutes. Once the penne is nearly done, add the shrimp and cook until they turn bright pink and the flesh is opaque, about 2 to 3 minutes. The penne should be fully cooked by now.

While the pasta cooks, place the avocado, basil, 2 tablespoons of Romano cheese, garlic, and lemon juice in a food processor. Season with salt and pepper. Blend until smooth. Add olive oil and pulse again until creamy. Remove the blade and stir in the diced tomatoes.

Drain the penne and shrimp, then return them to the pot. Add the prepared pesto, season with salt and pepper, and stir well to coat everything evenly.

Top the dish with the remaining Romano cheese before serving.
