2 (8 ounce) fillets beef tenderloin filet, 1 1/2 inch thick

2 tablespoons vegetable oil

freshly ground black pepper to taste

2 tablespoons butter
Instructions

Coat the beef with vegetable oil and season generously with freshly ground black pepper. Let it sit at room temperature for an hour.

Preheat a large, heavy skillet over medium-high heat. Sear the beef for 5 seconds on each side, then remove from the pan. Melt butter in the skillet until browned. Return the beef to the skillet and cook for 4-5 minutes on each side until the outside is crisp and browned. Remove from the skillet and let rest for about 5 minutes to allow the juices to redistribute.
