Cooking Instructions
In a large soup pot, melt butter over medium heat. Add diced carrots, onions, celery, thyme, and a pinch of salt. Stir in the chicken fat and cook, stirring occasionally, until the onions become soft and translucent, about 5 to 6 minutes.

Add the roasted chicken broth to the pot and bring the mixture to a boil. Adjust seasoning with additional salt if needed.
