Chicken Alfredo Lasagna

Ingredients List

1 (16 ounce) package lasagna noodles

1 (10 ounce) package frozen chopped spinach

3 cooked, boneless chicken breast halves, diced

2 (16 ounce) jars Alfredo-style pasta sauce, divided

2 pints ricotta cheese

4 cups shredded mozzarella cheese

salt and ground black pepper to taste
Instructions

Preheat the oven to 350°F (175°C).

Bring a large pot of lightly salted water to a boil. Cook the lasagna noodles until al dente, about 8 to 10 minutes. Drain and set aside.

Place the frozen spinach and 1/2 cup of water in a nonstick saucepan. Bring to a boil, then reduce heat to medium-high and cover. Cook for 6 to 7 minutes, stirring occasionally, until the spinach is tender. Drain and squeeze out any excess water.

In a medium bowl, mix together the cooked chicken and Alfredo sauce until fully combined.

In another bowl, combine the ricotta cheese and spinach, stirring until well mixed.

Layer the lasagna in a 9x13-inch baking dish, starting with a layer of noodles. Overlap the noodles and then spread the chicken-Alfredo mixture evenly over the top. Sprinkle with 1 cup of mozzarella cheese. Add another layer of noodles, then spread the spinach-ricotta mixture evenly on top. Pour half of the remaining Alfredo sauce over the spinach layer and sprinkle with 1 cup of mozzarella. Add one more layer of noodles, then top with the rest of the Alfredo sauce and the remaining mozzarella cheese. Season with salt and pepper.

Bake in the preheated oven for 50 to 60 minutes, or until the top is golden and bubbly.
