Classic Chicken Tikka Masala

1 tablespoon grated fresh ginger

2 medium Roma tomatoes, diced

½ cup tomato paste

¼ cup water

1 teaspoon garam masala

½ teaspoon ground coriander

½ teaspoon ground turmeric

½ teaspoon salt, or to taste

½ cup heavy whipping cream

½ bunch fresh cilantro, chopped
Instructions
Prepare the chicken: In a large bowl, mix together yogurt, garam masala, paprika, black pepper, salt, cayenne, and coriander. Add the chicken strips and toss until well-coated. Cover the bowl and let the chicken marinate in the fridge for 2 hours.
Preheat your oven to 450°F (230°C) and lightly grease a rimmed baking sheet.
Take the marinated chicken out of the bowl and arrange it on the prepared baking sheet, leaving some space between each piece.
Bake the chicken in the preheated oven until golden brown and fully cooked through, about 10 minutes. The internal temperature should reach 165°F (74°C). Once done, remove from the oven and set aside.
Prepare the sauce: Heat oil in a large skillet over medium heat. Add cumin seeds and sauté gently until they are lightly toasted and fragrant, about 3 minutes. Stir in the onions and cook until softened, about 4 to 5 minutes. Add the chile peppers, garlic, and ginger, and continue cooking until the onions turn golden brown, about 15 to 20 minutes. Stir in the tomatoes, tomato paste, and water, and let the mixture cook, stirring occasionally, until the tomatoes begin to break down, about 10 minutes.
Add garam masala, coriander, turmeric, and salt to the skillet, then stir in the chicken and cream. Mix well and cover, letting it simmer for 10 minutes. Garnish with fresh cilantro before serving.
