Deliciously fresh Cilantro Pesto

Ingredients List

1 (16 ounce) package farfalle pasta

1 bunch fresh cilantro

½ cup walnuts or pecans

¼ cup grated Parmesan cheese

5 cloves garlic, minced

1 tablespoon white wine vinegar

½ teaspoon cayenne pepper

salt to taste

½ cup olive oil
Instructions

Bring a large pot of salted water to a boil. Cook the pasta until it is tender but still firm to the bite, about 8 to 10 minutes. Drain well.

In a food processor or blender, combine cilantro, nuts, Parmesan, garlic, vinegar, cayenne, and salt. Add 1/4 cup olive oil and blend until smooth. Gradually add the remaining olive oil to achieve your desired pesto consistency.

Transfer the pesto to a small saucepan and heat on low, stirring constantly until it is warmed through and starts to simmer. Pour over the cooked pasta and toss to coat.
