Filet Mignon with Savory Bacon Cream Sauce

4 (4 ounce) filet mignon (beef tenderloin)

1 teaspoon olive oil

3 slices bacon, chopped

1 tablespoon butter

4 shallots, diced

¼ cup half-and-half cream

salt and pepper to taste
Cooking Instructions

Preheat your grill to medium-high heat and lightly oil the cooking surface.

Brush the filets with olive oil, then grill them to your preferred level of doneness (about 4 minutes per side for medium-rare). An instant-read thermometer should show 130°F (54°C) at the center. Once done, remove the steaks and cover with foil to rest.

While the steaks are resting, prepare the sauce. In a small pan, cook chopped bacon over medium heat, stirring occasionally until crisp, about 3-5 minutes. Add butter and shallots, cooking for another 5 minutes until the shallots are soft and translucent.

Pour in half-and-half, bring to a simmer, and stir occasionally until the sauce thickens slightly, about 8 minutes. Season with salt and pepper, and spoon the sauce over the steaks before serving.
Helpful Hints
If preferred, you can cook the filets in a hot skillet instead of grilling them for a different flavor.
