Gluten-Free Christmas Bliss Cookie Bars
Ingredients

1 cup unsalted butter, softened

¾ cup brown sugar

½ cup white sugar

2 large eggs

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

2 ½ cups gluten-free flour blend (such as Namaste Perfect Flour Blend™)

1 teaspoon baking soda

1 teaspoon salt

½ teaspoon xanthan gum

1 (8 ounce) package white chocolate chips

¾ cup shredded coconut

1 (16 ounce) container cream cheese frosting

½ cup chopped dried cranberries, or to taste
Directions

Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.

In a large bowl, cream together the butter, brown sugar, white sugar, eggs, cinnamon, and vanilla extract until smooth.

In a separate bowl, whisk together the gluten-free flour, baking soda, salt, and xanthan gum. Gradually add half of the dry ingredients to the wet mixture and mix well. Then, add the remaining dry ingredients along with the white chocolate chips and shredded coconut. Stir until fully combined. Press the mixture into the prepared pan.

Bake for about 23 minutes, or until the edges are golden brown. Allow the bars to cool completely, about 30 minutes.

Once cooled, spread with cream cheese frosting and sprinkle dried cranberry bits on top. Cut into 48 triangle-shaped bars.
Chef's Tip:
For a different twist, you can bake these as individual cookies. Simply bake until the edges are golden brown, about 12 minutes.
