Greek-Style Loaded Burgers

2 ounces crumbled feta cheese

Burger Ingredients:

1 medium red bell pepper

1 pound lean ground beef

8 ounces fresh spinach - rinsed, drained and coarsely chopped

6 ounces crumbled feta cheese

¼ cup bread crumbs
-
¼ cup chopped onion
-
1 large egg, beaten
-
1 clove garlic, minced
-
3 sprigs fresh mint, coarsely chopped

2 sprigs fresh basil, coarsely chopped

2 sprigs fresh parsley, coarsely chopped

salt and ground black pepper to taste

4 Kaiser rolls, split and toasted

1 medium tomato, sliced

4 leaves lettuce
Instructions

Prepare the spread: In a small bowl, mix together feta cheese, mayonnaise, lime juice, mint, and parsley. Set aside until ready to use.

Make the burgers: Preheat the broiler and adjust the oven rack to about 6 inches from the heat source. Line a baking sheet with aluminum foil.

Slice the bell pepper in half from top to bottom, removing the stem, seeds, and ribs. Place the halves on the prepared baking sheet with the cut sides facing down.

Broil the pepper halves until the skin is charred and blistered, about 5 minutes. Remove from the oven and place the pepper halves in a paper bag to cool and steam for 5 minutes.

Preheat the grill to medium heat and lightly oil the grill grate.

Peel off the charred skin from the bell pepper. Dice the flesh and place it in a large bowl.

Add ground beef, spinach, feta, breadcrumbs, onion, egg, garlic, mint, basil, parsley, salt, and pepper. Mix gently with your hands until well combined. Form the mixture into four 4 1/2-inch patties.

Grill the burgers on the preheated grill for about 4 minutes per side or until they reach your desired level of doneness. For medium, an instant-read thermometer should register 160°F (70°C).

Serve the burgers on warm rolls with feta spread, fresh tomatoes, and lettuce.
